Lenivae vareniki (Lazy cheese cakes)

 (Yields 4 portions)


16 ounces Pot cheese

½ cup all purpose flour

2 eggs

To taste sugar

To taste salt

As needed Sour Cream


1.      Combine Pot cheese, flour, egg and sugar.  Mix until smooth.

2.      Divide the dough into about 4 parts.  Roll each part into a tube like shape about 1 inch thick. Cut the cheese sections into cubes. 

3.      Place cheese cubes in a pot of salted boiling water. 

4.      Reduce the heat to simmer, cover and cook for ten minutes.

5.      Serve on a plate with sour cream.
